Simple, tasty, classic zucchini bread. Enjoy!
2 cups sugar
1 cup melted butter, cooled slightly
4 cups fresh zucchini grated
2 tsp vanilla extract
3 1/4 cup flour
1 1/2 tsp cinnamon
1/2 tsp nutmeg
pinch of cloves
1/2 tsp baking powder
1 tsp baking soda
1 tsp salt
1 cup pecans, chopped (optional)
Preheat oven to 375, grease 2 targe loaf pans
1) In a large bowl or bowl of a standing mixer… mix together the dry ingredients …flour, cinnamon, nutmeg, cloves, baking powder, baking soda and salt. On medium low speed add the eggs, sugar, zucchini, vanilla and butter … mix until just combined. Stir in the nuts.
2) Pour batter into prepared bread pans, make sure to divide evenly and bake for 40 - 50 minutes or until a wooded pick comes out clean. ENJOY!
