Donut and Coffee Muffin

The funny thing about this muffin is most my family members won't touch coffee and the day I whipped them up my one coffee lover (my husband) was out of town. As a result, I pawned them off on my neighbors....They didn't seem to mind in the least. 

Ingredients:

10 Tbs butter, at room temperature 

1/2 cup granulated sugar

1/3 cup brown sugar

2 large eggs

1 tsp vanilla extract

2 1/2 cups flour

1 1/2 tsp baking powder

1/4 tsp baking soda

1 tsp nutmeg

1 1/2 tsp cinnamon

3/4 tsp salt

1 cup milk 

Direction:

Preheat the oven to 375. Grease muffin cups or use paper liners. This recipe should make 18 muffins

1) In a bowl sift together the flour, baking soda, baking powder, nutmeg, cinnamon, and salt. Set aside.

2) With an electric mixer, cream the butter, add both sugars and beat until light and fluffy. Beating the eggs, one at a time mixing well after each addition. Add vanilla.

3) Mix the flour mixture into the butter mixture, alternating with the milk. Do not over mix.

4) Divide the batter between the prepared cups.  bake for 15-20 or until a wooden pick comes out clean. Cool.

 Glaze Ingredients:  

1 1/2 cups powdered sugar

3 Tbs Cold brew coffee concentrate

To prepare the Glaze, whisk both ingredients together. Dip muffins into glaze. Holy Yum
