Orange Ricotta Pancakes

I Decided, after taking this photo that I prefer these light, fluffy pancakes without the heavy chocolate glaze but, I wanted to give you the recipe before I retake the photo. So do what you will.. and maybe chocolate is the way to go for you, but I loved them with just a little butter and sugar...HEAVEN!!

Ingredients:

2 cups Flour

3 Tbs sugar

3 tsp Baking Powder

1/4 tsp salt

2 cups ricotta

1 cup milk 

1 tsp orange zest

1/3 cup orange juice

4 eggs

1 tsp vanilla 

Directions:

1) Whisk the flour, sugar, baking powder and salt in a large bowl. Set aside.

2) In a medium sized bowl mix the ricotta, milk, zest, orange juice, eggs and vanilla.

3) Pour the wet ingredients into the the flour mixture. Whisk until blended but still a bit lumpy. 

4) Pour about 1/4 cup of the batter onto a medium hot griddle. Cook pancakes until they start to bubble and then flip and cook until done.

Top with butter and sugar and ENJOY!
