Apple Spice Waffles and Chai buttermilk Syrup

Yes…. this IS as tasty and cozy as it sounds. These rich apple waffles are beautifully complimented with the mind blowingly delicious chia buttermilk syrup. Brunch just leveled up!

Syrup ingredients:

1/2 cup unsalted butter

1 1/2 cups sugar

3/4 cup buttermilk

2 Tbs corn syrup

1 tsp baking soda

2 chai tea bags

1 tsp vanilla

Directions:

1) Melt butter in a large pot. Add sugar, buttermilk, corn syrup and baking soda.. mix well with a whisk.  On med high heat bring mixture to a low boil and boil (without stirring) for about 5-7 minute, until syrup is a light golden color. 

2) Remove from heat and stir in the vanilla. Steep the tea bags in the syrup for about 5 minutes, pressing the bags against the side of the pot with the back of a spoon before removing.

Waffle Ingredients:

2 cups flour

1 1/2 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1 Tbs cinnamon

1/2 tsp nutmeg

3 eggs, separated

1/2 cup butter, room temperature

1/2 cup brown sugar

1 3/4 buttermilk

1 tsp vanilla

2 cups shredded apples

Directions:

warm your waffle iron.

1) In a bowl whisk together the dry ingredients; flour, baking powder and soda, salt cinnamon and nutmeg. Set aside for later.

2) In the bowl of a standing mixer add your 3 egg whites. With a whisk attachment (or a hand held mixer) beat egg whites until stiff. Pour egg whites into a separate bowl and save for later.

3) In the now emptied bowl of the standing mixer beat the butter and sugar with the paddle attachment until fluffy. Add the egg yolks into the butter/sugar mixture on medium speed until fully combined. Add the vanilla, mix for one min.

4) On low speed, slowly add the flour mixture in 3 parts, alternating with the buttermilk. On low speed stir in the shredded apples.

5) With a rubber scraper gently fold in your egg whites. Mixing until no white streaks remain.

Cook waffles, making sure to grease you iron well. Enjoy!
