Simple, buttery and super delicious! It's your grandmas peanut butter cookie with the added texture and wholesome goodness of oatmeal, along with an indulgent smear of chocolate. Yummy!
1/2 cup butter (room temperature)
1/2 cup brown sugar
1/3 cup sugar
1/2 cup peanut butter
1 tsp vanilla
3/4 cup flour
1 tsp baking soda
1/4 tsp salt
1 1/4 cup quick oats
2 Tbs butter
4oz semi sweet chocolate
Preheat the oven to 350.
1) In a medium bowl, beat together butter, peanut butter, and both sugars. Then Add the egg and vanilla.
2) Add flour, baking soda and salt to the butter mixture. Beat until just combined. Mix in oats.
3) Drop balls of dough onto a baking sheet, press down slightly with the prongs of a fork. Bake cookies for 8 minutes, rotating the pan half way through. Be careful not to overbake.
4) In a heatproof bowl set over a pan of barely simmering water (bottom of bowl should not touch water), stir butter and chocolate often until smooth, do this for 5 minutes. Spread, or drizzle or smear chocolate onto cooled cookie. Enjoy!
