Peanut Butter S'mores Brownies

Chocolate, peanut butter, marshmallows, and graham crackers in one brownie!!! Amazing!

Ingredients:

-crust-

2 cups crushed graham crackers

8 Tbs butter

1/4 cup sugar

-brownie- 

1/2 cup flour

1/4 tsp salt

1/4 tsp baking powder

1/3 cup cocoa

1 cup sugar

1/2 veg oil 

2 eggs

1 tsp vanilla 

-ganache-

1/3 cup cream

2 Tbs peanut butter

1 cup milk chocolate chips

mini marshmallows

Direction: 

preheat oven to 350

1) In a bowl mix together graham crackers, butter and sugar. Press mixture into a 9 in pan. Cover the bottom and about an inch up the sides of the pan (I used a 10 inch tart pan...but a 9 in cake pan will work fine).  Bake for 5 min.

2) Mix all the dry ingredients for the brownie batter, add the oil, eggs and vanilla. Mix until just blended. Spread on top of the baked graham cracker crust. Bake for 30-35 minutes, or until brownies are cooked through.

3) When brownies are cooked and still hot, sprinkle with marshmallows....leaving space between clusters so you have room to add the ganache. Place the brownie/ marshmallow combo under the broiler until marshmallows start to brown (pay close attention, you don't want to burn the marshmallows or brownies). 

4) To make the ganache, bring cream to a simmer...add the peanut butter and stir until melted. Take cream, peanut butter mixture off of the heat. Add the chocolate chips to the cream, let it sit for a min in the hot cream. Then stir until smooth. You can put this chocolate mixture into a piping bag or just use a spoon. Cover all the exposed brownie with the peanut butter ganache. Enjoy!
