This Broccoli Parmesan rice is such a lovely simple side....easy and delicious.
3 Tbs butter
2 cloves garlic, minced
1 head of broccoli, chopped into bite sized pieces
1 cup long grain rice
1 1/2 cup chicken broth
1 cup shredded parmesan, divided
salt and pepper
1) In a medium sized sauce pan melt butter over medium heat. Add garlic and sauté until you start to smell the garlic..less then a minute. Add Broccoli to the butter and garlic....Sauté until it becomes bright green, about 2 minutes.
2) Stir the rice and broth into the Broccoli mixture. Season with salt and pepper. Cook until rice is tender and the liquid is absorbed.
3) When the rice is fully cooked...stir in 3/4 cup shredded parm. I would suggest shredding it fresh, prepackaged parmesan tends to not melt very well. Taste and add more salt and pepper if desired. Top with the remaining 1/4 cup parmesan. ENJOY!
