Strawberry Pie

Jump start summer with this tasty pie. Strawberry heaven is what it should be called. 

Ingredients:

-crust-

2 cups crushed graham crackers

8 Tbs butter

1/4 cup sugar

-Pie Filling-

4 cups strawberries

6 oz rasberries 

4 Tbls corn starch

1 cup sugar

pinch of salt

4 Tbs water

a drop or two of red food coloring (optional)

Directions: 

preheat oven to 350

1) In a bowl mix together graham crackers, butter and sugar. Press mixture into a pie pan. Cover the bottom and sides of the pan (I used a 10 inch tart pan...but a pie pan will work fine).  Bake for 10 min or until crust is set. Cool.

2) Clean and cut the tops off the berries. Place the whole berry (pointy side up) on the bottom of the baked and cooled pie shell. Fill in the gaps with the raspberries, reserving about half of the raspberries.

3) Crush the remaining strawberries and raspberries in a bowl and pour into a medium sized sauce pan.

4) Stir in the remaining ingredients and cook over medium-high heat, stirring constantly until the mixture is thick and clear. 

5) Pour the strawberry mixture over the fresh berries in the pie pan. Cool completely and serve with sweetened whipped cream.
