 Cheesy Chipotle meatloaf

This Meatloaf was a hit! Super flavorful, spicy… but not too much, and who doesn’t love things stuffed with cheese. Take your meatloaf game up a notch with this exciting rendition.

Ingredients:

1 1/2 lbs ground beef

1 Tbs olive oil

1 1/2 cup diced onion

1/3 cup diced yellow pepper

4 cloves of garlic, minced

2 chipotle peppers, minced

1/2 cup panko bread crumbs

1 egg

2/3 cups diced Mexican tomatoes

1 cup black beans, drained and rinsed

1 tsp salt

1/2 tsp pepper

6 ounces cheddar cheese (sliced or shredded)

-Chipotle ketchup-

1/2 cup ketchup

1/2 chipotle pepper minced

Directions:

Preheat oven to 350

1) In a skillet over medium heat warm your oil and then sauté your onions until soft and transparent. Then add your yellow peppers, garlic and chipotles. Sauté for about 3 minutes. Remove from heat.

2) In a large bowl add your meat and all the other ingredients (except the cheese) including your cooked veggies. Mix well, I have found my hands are the best tool to get this job done.

3) on a baking sheet place the meat mixture, in the form of a flat rectangle. In the middle of the rectangle place the cheddar cheese. Take the side of the meat loaf up and over the cheese until it forms a loaf. Making sure the cheese is completely enveloped in meat.

4) bake for 60 min or until a meat thermometer registers 160 degrees (fahrenheit) . Adding the ketchup 1/2 way through.

5) While the loaf is baking make the topping… stir together the ketchup and chipotle. When the meatloaf has been cooking for 30 min. remove it from the oven and add the ketchup topping. Then return the loaf back to the oven for the remaining time. Enjoy!
