Crispy Banana French Toast

I love everything about this slightly indulgent breakfast, it’s sweetened by the overripe bananas and has such a satisfying crunch and soft center. I think I could eat it every morning and be a happy woman.

Ingredients:

1 large overripe banana, mashed well

4 large eggs

1/4 cup half and half or cream

1/2 Tbs cinnamon

1 1/2 Tbs sugar

1/4 tsp salt

8 oz box panko

oil for frying

6-8 pieces of bread

Directions:

1) In a medium sized bowl whisk together mashed banana, eggs, half and half, cinnamon, sugar, and salt. (make sure your banana is mashed pretty good you don’t want huge chunks)

2) Pour oil into a large heavy bottomed pan, you want about an inch of oil. Warm your oil over medium heat until it reaches 350*

3) While your oil is heating prepare your french toast. Pour panko in a shallow dish. Line a cookie sheet with parchment and set aside. Dip your bread into the banana/egg mixture in kind of a scooping motion.. making sure banana chunks stay in the top of your bread. Gently coat with the panko on both sides of the eggy bread. Place the prepared toast on the lined baking sheet.

4) When the oil is hot.. Place french toast gently in the oil. Fry each side until its golden…place them on a cooling rack or right onto a plate…serve with some maple syrup. ENJOY!
