Nut-tastic Peanut Butter Cookies

Sometimes you try a new recipe and it works out beautifully the first time....these cookies fall into that miraculous territory! So gooey in the center and deliciously crunchy on the outside, with yummy roasted peanuts and coarse sugar creating an amazing texture, and lets not forget the chocolate....anyway, I'm a big fan!!

Ingredients:

1 1/2 sticks of butter (12 Tbs)

1/2 cup peanut butter

1 1/2 cup packed brown sugar

2 large eggs

1 tsp vanilla

2 1/3 cup flour

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1 cup semisweet chocolate chunks or chips

1 cup chopped roasted and salted peanuts

1/2 cup unrefined cane sugar

Directions:

preheat oven to 375

1) In a bowl of an electric mixer fitted with the paddle attachment, or using a handheld mixer, beat the butter and peanut butter at medium speed until creamy and smooth, 1 -2 minutes. Add sugar and beat the mixture until light and fluffy. Be sure to scrape down the sides of the bowl occasionally. 

2)Beat in the eggs, one at a time, beating well after each egg is added to thoroughly combine. Beat in the vanilla. 

3) In a medium bowl, whisk together the flour, baking powder, baking soda and salt. Add the flour mixture to the butter mixture, beating just until combined. Using a rubber spatula, fold in the chocolate chunks.

4) Pour the nuts and unrefined sugar into two bowls. Roll balls of cookie dough first into the peanut and then the sugar. place ball onto baking sheet and flatten them slightly with the bottom of a cup or with the prongs of a fork if you want that traditional peanut butter cookie look. Bake for 8 min (watch carefully to not over bake) ...and enjoy!
